Full Cupping Notes
Rich, deep, and beautifully balanced, this lot brings out the best in roast intensity. The dry fragrance unfolds with layers of bittersweet chocolate, warm brown spices, and a touch of roasted nuts. As the coffee blooms, a deep, caramelized sweetness rises, grounding the aroma with a rich, bass-heavy warmth.
In the cup, the flavors are full and rounded, nutty cashew and hazelnut swirl with silky almond milk, while milk chocolate and soft caramel sweetness add depth. As it cools, notes of cocoa nibs and roasted hickory emerge, lending a bittersweet edge that lingers into a smoky-sweet finish.
A coffee that’s bold yet inviting, with just the right balance of sweetness and roast complexity.
Farm Details
Pedra de Oliveira coffee farm is located in the town of Pimentas, within the city of Medeiros, an area shaped by the Canastra mountain range. Altitudes here reach up to 1500 meters above sea level, providing ideal growing conditions for high-quality coffee. The farm cultivates a Brazilian hybrid variety, a cross between Yellow Catuaí and Obata, chosen for its disease resistance and high yield.
This is a dry process coffee, where whole cherries are laid out to dry with the fruit intact, rather than being removed before drying. This method influences the cup profile, contributing to a big-bodied mouthfeel and lower acidity. Brazilian dry process coffees like this one are often favored as a base for espresso blends due to their balanced structure and depth.
